Mango sticks that are as fun to make as they are to serve!

INGREDIENTS
1 1/2 cups oat flour (+ extra for rolling)
3 TBSP unsweetened peanut powder
1/2 cup mashed mango (approx 1 cup frozen chunks or 3/4 cup cubed fresh mango), or substitute with peach
1 egg
1 tsp grated fresh ginger or 1/2 tsp ginger powder

EQUIPMENT
Baking pan – non-stick or lined with silicone mat or parchment paper, or very lightly oiled with coconut, olive or sunflower oil
DIRECTIONS
Preheat oven to 310°F
Whisk the egg together with the mashed mango and ginger. Add the flour and peanut powder and stir well with a spoon until the dough is smooth. If it’s too sticky to handle, add a bit more flour and work the dough with your hands until you get a good consistency.
Take a heaping tablespoonful of dough and place on a lightly floured surface. With your hands, roll out to approx a 1/4” thick and 1 ft long log. Bend the log in half and make a twist by alternately taking one side and laying over the other. Dough will make approx 9 sticks.
Bake for 15-17 minutes, until the bottoms are golden. They will be semi-firm, but if you’d like a firmer stick, bake a bit longer or leave the tray in the oven while it cools down.
Will keep at room temperature for a few days, about a month in the fridge, or can be frozen.
