Apple & rice treats that are super fun for kids to make!

INGREDIENTS
1 large unpeeled apple, any type
5 plain unsalted unsweetened rice cakes
2 TBSP whole hemp seeds
1/2 tsp Ceylon cinnamon or 1/4 tsp ground ginger
EQUIPMENT
Grater
Silicone bite-size baking mold, or non-stick or lightly greased (coconut, olive or sunflower oil) square pan or loaf pan (can put one strip of parchment overhanging edges for easy removal)
DIRECTIONS
Preheat oven to 310°F
Grate the apple into a medium bowl. Break the rice cakes into small pieces and add to the bowl, then add the hemp seeds and spice. Using hands, gently squish the mixture together well until it becomes a bit sticky. With slightly wet fingers (using either water or apple cider vinegar), press the mixture into the mold cavities and pack firmly including into edges, or press into square or loaf pan. Alternately drop by the spoonful onto a baking sheet and pinch.
Bake until starting to brown slightly, approx 15-20 mins. Let cool completely before removing from mold.
Will keep at room temperature for a couple of days, a couple of weeks in the fridge, or can be frozen.
