Yaaas ice cream sandwiches!

This hound isn’t dreaming. Those ice cream sandwiches, the ones with the pumpkin, dragonfruit & banana ice cream between peanut & dragonfruit cookies, are his all his!

Call it ice cream, ice goat milk or gelato, this creamy mixture is the real deal in dog world! This recipe makes 4 thick ice cream sandwiches, and 4 extra ice cream slabs.

For the ice cream you’ll need:

4 tsp Cúbies ice pop mix

2 egg yolks (save the whites for the cookies), whisked

1/2 cup goat milk (we recommend raw fermented goat milk from Big Country Raw)

1 1/2 TBSP coconut oil

  1. In a small pot, whisk together the coconut oil and Cúbies powder and cook on low heat while stirring for 4 minutes.
  2. Remove from heat and whisk in the goat milk. (Leave the element on as you’ll be cooking it some more.)
  3. Whisk the egg yolks into the pot mixture and cook over medium-low heat for 3 minutes, stirring constantly. Don’t overcook as it will curdle – you just want it hot and slightly thickened.
  4. Remove from heat and pour into silicone mold on a baking pan (we used a mold carried by Big Country Raw) to approx 1/2″. If you don’t have a mold use silicone baking cups.
  5. Freeze for at least 2 hours and then pop the ice cream slabs out of mold.
  6. Tip: If you just want to make ice cream, try letting the mixture cool and then shaking 5 minutes in a mason jar. Then pour it into a plastic container and freeze.

For the cookies you’ll need:

Cúkies cookie kit

1/2 cup applesauce

2 egg whites, whisked until frothy (the recipe card in kit calls for water, but for this recipe you’ll replace the water with the egg whites)

  1. Mix the oat flour, peanut powder, dragonfruit and applesauce together, then fold in the egg whites with a spatula until combined.
  2. Using floured fingers (there is an extra packet of oat flour in the kit), press the batter into the mold or cups and smooth out tops to make flat.
  3. Bake at 300 degrees F for 18-25 minutes – they will be done when the tops are browned and crispy (see image below).

When the cookies are cool, pop out of the mold and assemble! Best to feed in moderation, like max one ice cream sandwich a day 😉 Spare sandwiches can be cut into halves or quarters and frozen for future special treats!
