Here’s a quick PB&J version of our Cúkies: ‘quick’ as in pressed into a mold instead of rolled out and cookie-cutter cut, and “PB&J” as in the dragonfruit turns into a ruby-coloured jammy topping on a soft peanut cookie! We replaced egg whites for the water to get a lighter texture. Try making with Big Country Raw duck eggs & surprise the hound with the leftover egg yolks!
Spoon the dragonfruit into the mold. This great mold with an indent for halving a cookie is by Messy Mutt.
Replace the water with 2 whisked til frothy egg whites.
Press the dough into the mold, using the included flour to keep from sticking to fingers. Bake at 300 degrees F for 22-28 minutes, checking from 20 minutes, until golden around the edges. Let cool before turning out. Yay PB&J!
