Iced Cúkies

Make this bright white easy-to-spread icing to decorate mini cookie hearts!

Reserve up to half of the included red dragonfruit pieces (amount depending on how many of the approx 70 cookies you intend to ice). Mix together 2 TBSP arrowroot powder (like gluten-free Bob’s Red Mill) with 2 tsp (or 1 TBSP : 1 tsp ratio for any amount) plain yogurt until very smooth. Using a small rounded knife, push the icing out to edges and sprinkle on a bit of dragonfruit. A little of the dragonfruit goes a long way to add colour, and the icing will harden as it dries.
